This Cilantro Chicken is one of my favorite go-to meals. It’s simple and packed with flavor. It combines juicy pan-fried chicken breast with a fresh, savory cilantro sauce that comes together in minutes. Served over jasmine rice with a side of steamed broccoli. It’s a balanced meal that’s both satisfying and easy to make.

What I love most about this recipe is the cilantro sauce. Simply combine fresh chopped cilantro, soy sauce, garlic, water, and a touch of coconut sugar. It creates a savory-sweet topping that perfectly complements the chicken.

The chicken breast is first pan-fried until golden brown and cooked through, then sliced into bite-sized pieces. To serve, pour cilantro sauce over the top, allowing every piece to soak up the fresh cilantro garlic flavors.

Ingredients

  • 1 lb chicken breast

  • salt & black pepper to season

  • 2 tbsp olive oil

  • For Sauce
  • 1/3 cup chopped cilantro

  • 4 cloves garlic (minced)

  • 1 tbsp coconut sugar or sugar

  • 6 tbsp water

  • 3 tbsp soy sauce

Directions

  • Place chicken breast on a cutting board.
  • Using a sharp knife, slice horizontally through the thickest part of the breast and cut all the way through. This helps it cook faster and more evenly.
  • Add olive oil to a pan. Once hot, pan fry chicken breast and season with salt and black pepper on both sides.
  • On medium heat, cook for about 5 minutes on each side.
  • Once cooked, take off heat immediately to prevent the chicken from drying out. Check by inserting a thermometer and the internal temperature reaches 165F.
  • For sauce, combine chopped cilantro, minced garlic, coconut sugar, soy sauce and water. Mix well and set aside.
  • Once everything is ready, cut chicken into bite size pieces and pour cilantro sauce over the chicken. Serve with Jasmin rice and steamed broccoli.
