Cilantro Chicken

It combines juicy pan-fried chicken breast with a fresh, savory cilantro sauce that comes together in minutes. Served over jasmine rice with a side of steamed broccoli. It’s a balanced meal that’s both satisfying and easy to make.
What I love most about this recipe is the cilantro sauce. Fresh chopped cilantro is combined with soy sauce, garlic, water, and a touch of coconut sugar to create a savory-sweet topping that perfectly complements the chicken.

Cilantro Chicken

1 lb chicken breast
salt & black pepper to season
2 tbsp olive oil
- For Sauce
1/3 cup chopped cilantro
4 cloves garlic (minced)
1 tbsp coconut sugar or sugar
6 tbsp water
3 tbsp soy sauce
Directions
- Place chicken breast on a cutting board.
- Using a sharp knife, slice horizontally through the thickest part of the breast and cut all the way through. This helps it cook faster and more evenly.
- Add olive oil to a pan. Once hot, pan fry chicken breast and season with salt and black pepper on both sides.
- On medium heat, cook for about 5 minutes on each side.
- Once cooked, take off heat immediately to prevent the chicken from drying out. Check by inserting a thermometer and the internal temperature reaches 165F.
- For sauce, combine chopped cilantro, minced garlic, coconut sugar, soy sauce and water. Mix well and set aside.
- Once everything is ready, cut chicken into bite size pieces and pour cilantro sauce over the chicken. Serve with Jasmin rice and steamed broccoli.
