Ingredients

  • For Spinach Egg Wrap
  • 1 cup spinach (handful)

  • 2 eggs

  • 1 tbsp olive for pan fry

  • For Tuna Filling
  • 1 can tuna, drained

  • 1 tbsp mayonnaise

  • 1 tsp mustard

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

  • half avocado slices to assemble

Directions

  • Add the spinach and eggs to a blender and blend until smooth. 
  • Heat a non-stick skillet over medium heat and add about 1 tbsp of olive oil.
  • Once hot, pour the egg mixture into the pan and swirl it around to form a thin, crepe-like layer.
  • Cook for 2–3 minutes until set, then carefully flip and cook for another minute. Transfer to a plate and let it cool slightly.
  • Prepare Tuna Filling
  • In a bowl, combine the drained tuna, mayonnaise, mustard, black pepper, and garlic powder. Mix until everything is well combined.
  • To Assemble
  • To assemble, spread the tuna mixture across the center of the spinach egg wrap. Top with sliced avocado. Fold the sides inward and wrap tightly.
