Ingredients

  • 2 eggs

  • 4-5 stalks scallions

  • Salt & Pepper to taste

  • Half avocado

  • 1-2 slices tomatoes

  • 2 slices of pepper jack cheese or any cheese

  • 1 bagel

Directions

  • Crack 2 eggs into a bowl, add salt and black pepper. Whisk until combine.
  • In a pan, heat up some oil and once it’s hot add in eggs.
  • Once it starts to set, add toasted bagel onto the egg. Cut side facing down.
  • Once egg is cooked, flip it over and add slices of cheese, tomato and avocado on one side of bagel.
  • Close the other side of bagel on top of the side that has tomato and avocado.
  • It’s ready to enjoy!
