Chicken Meatballs

Ingredients

  • Meatballs
  • 2lb ground chicken

  • 2 eggs

  • 1/2 cup gluten free breadcrumbs

  • 1/2 cup parmesan

  • 8 cloves of garlic

  • 2 tsp oregano

  • 2 tsp dried thyme

  • 2 tsp dried parsley

  • 2 tsp dried basil

  • 2 tsp salt

  • 1 tsp black pepper

  • Sauce
  • 1 can marinara sauce (680g)

  • 2 tsp thyme

  • 2 tsp oregano

  • 2 tsp parsley

  • 2 tsp basil

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tbsp sugar

Directions

  • Meatballs
  • Add ground chicken into the mixing bowl.
  • Add eggs, parmesan, GF breadcrumbs, and all seasonings.
  • Mix well and let it rest at least 1 hour or you can leave it overnight.
  • Prepare a sheet tray lined with parchment paper.
  • Roll meatball into small bite size and bake at 350F for about 15-18 minutes or until it’s cooked.
  • Sauce
  • Meanwhile, prepare the sauce by adding marinara sauce into a pan and bring to a simmer.
  • Add all seasonings, salt and sugar. Stir well and adjust to your liking.
  • Once the meatballs are cooked, add it into the prepared sauce and mix well.
  • Let it simmer together for 3-5 minutes.
  • Serve with gluten free pasta or rice and enjoy!
