Ingredients

  • 4 pieces chicken breast

  • salt & pepper

  • Olive oil for frying

  • For Onion Sauce
  • 1/2 medium onion

  • 6 cloves mined garlic

  • 1/2 cup chicken broth

  • 3/4 cup milk

  • 1/2 tsp paprika

  • 1 tsp dried basil

  • 1 tsp dried oregano

  • 1 tsp sugar

Directions

  • Season chicken breasts with salt and pepper. 
  • Heat a pan over medium heat with about 2-3 tbsp olive oil, then cook the chicken until golden brown on both sides and fully cooked through (about 5 minutes on each side). Use thermometer to check the internal temperature, it should reach 165F. Remove from the pan and let it rest while you prepare the sauce.
  • To make onion cream sauce. Use the same pan, sauté the diced onions until they become soft. Add the minced garlic and cook for another minute until fragrant.
  • Pour in chicken broth and stir, scraping up any browned bits from the bottom of the pan. 
  • Add milk and continue stirring over medium heat until the sauce begins to thicken.
  • Season with paprika, dried basil, dried oregano, salt and sugar. Simmer for a few minutes until the flavors come together.
  • Return cooked chicken to the pan and spoon the creamy onion sauce over the top. Let it simmer for 2–3 minutes so the chicken absorbs some of the sauce.
  • Spoon a generous helping of mashed potatoes onto a plate and top with sliced chicken. Finish with more of creamy onion sauce. 
  • You can also serve this with rice or vegetables.
