Chicken Udon Soup

Chicken Udon Soup is a comforting Japanese-inspired noodle dish made with chewy udon noodles served in a warm, savory dashi chicken broth topped with stir fried ground chicken and scallion. The broth is quick and easy to make with only 2 ingredients. It’s a simple, nourishing meal that’s perfect for chilly days or whenever you’re craving something warm and comforting.

  • Use chicken bone broth for extra protein.
  • If you don’t have chicken stock, you can replace it with water and add 2 packets of dashi powder
  • Add 2-3 slices of ginger to give the broth more depth of flavor.
  • You can also add vegetables like bok choy or broccoli to make the soup even more nutritious.

Ingredients

  • Stir Fried Chicken
  • 1 lb chicken

  • 2 tbsp olive oil

  • 6 cloves garlic

  • 2 tbsp soy sauce

  • 1 tbsp oyster sauce

  • 1 tsp sugar

  • 4 stalks chopped scallion (more for garnish)

  • Salt & pepper

  • Noodle
  • 2 servings udon noodles

  • 2.5 cups chicken bone broth or chicken broth

  • 1 packet dashi

Directions

  • Add olive oil to the pan. Once it’s hot, add minced garlic and stir fry for a few seconds until fragrant.
  • Add in ground chicken, seasoned with salt and pepper and stir fry until it’s cooked.
  • Add in soy sauce, oyster sauce, sugar and chopped scallions. Mix until combined. Taste and adjust salt & pepper to your liking. Set aside.
  • To make noodles, bring water to a boil and add in noodles. Cook according to the instruction of packaging.
  • Mean while, add 2.5 cup of chicken bone broth into another pot and add 1 packet of dashi. Let it simmer for about 4-5 minutes and take off the heat.
  • To serve, add cooked udon noodles into a bowl, top with stir fried ground chicken. Add dashi chicken broth and top with scallions.
