Chicken Udon Soup

Tips
- Use chicken bone broth for extra protein.
- If you don’t have chicken stock, you can replace it with water and add 2 packets of dashi powder
- Add 2-3 slices of ginger to give the broth more depth of flavor.
- You can also add vegetables like bok choy or broccoli to make the soup even more nutritious.

- Stir Fried Chicken
1 lb chicken
2 tbsp olive oil
6 cloves garlic
2 tbsp soy sauce
1 tbsp oyster sauce
1 tsp sugar
4 stalks chopped scallion (more for garnish)
Salt & pepper
- Noodle
2 servings udon noodles
2.5 cups chicken bone broth or chicken broth
1 packet dashi
Directions
- Add olive oil to the pan. Once it’s hot, add minced garlic and stir fry for a few seconds until fragrant.
- Add in ground chicken, seasoned with salt and pepper and stir fry until it’s cooked.
- Add in soy sauce, oyster sauce, sugar and chopped scallions. Mix until combined. Taste and adjust salt & pepper to your liking. Set aside.
- To make noodles, bring water to a boil and add in noodles. Cook according to the instruction of packaging.
- Mean while, add 2.5 cup of chicken bone broth into another pot and add 1 packet of dashi. Let it simmer for about 4-5 minutes and take off the heat.
- To serve, add cooked udon noodles into a bowl, top with stir fried ground chicken. Add dashi chicken broth and top with scallions.
