2 eggs
4-5 stalks scallions
Salt & Pepper to taste
Half avocado
1-2 slices tomatoes
2 slices of pepper jack cheese or any cheese
1 bagel
Directions
- Crack 2 eggs into a bowl, add salt and black pepper. Whisk until combine.
- In a pan, heat up some oil and once it’s hot add in eggs.
- Once it starts to set, add toasted bagel onto the egg. Cut side facing down.
- Once egg is cooked, flip it over and add slices of cheese, tomato and avocado on one side of bagel.
- Close the other side of bagel on top of the side that has tomato and avocado.
- It’s ready to enjoy!
