Gluten Free Chicken Meatballs

Instead, using gluten-free breadcrumbs to help bind the mixture while keeping the meatballs tender and juicy. Ground chicken is combined with eggs, garlic, parmesan cheese and simple seasonings to create a delicious savory dish that’s naturally high in protein.
These meatballs are versatile and easy to prepare. They pair well with marinara sauce over gluten-free pasta, rice, or served with roasted vegetables for a balanced meal. Because they are made without gluten-containing ingredients, they are suitable for people with gluten intolerance or Celiac disease, while still delivering the satisfying taste and texture of traditional meatballs.

2lb ground chicken
2 eggs
1/2 cup gluten free breadcrumbs
1/2 cup parmesan
8 cloves of garlic
2 tsp oregano
2 tsp dried thyme
2 tsp dried parsley
2 tsp dried basil
2 tsp salt
1 tsp black pepper
- Sauce
1 can marinara sauce (680g)
2 tsp thyme
2 tsp oregano
2 tsp parsley
2 tsp basil
1 tsp salt
1 tsp black pepper
1 tbsp sugar
Directions
- Meatballs
- Add ground chicken into the mixing bowl.
- Add eggs, parmesan, GF breadcrumbs, and all seasonings.
- Mix well and let it rest at least 1 hour or you can leave it overnight.
- Prepare a sheet tray lined with parchment paper.
- Roll meatball into small bite size and bake at 350F for about 15-18 minutes or until it’s cooked.
- Sauce
- Meanwhile, prepare the sauce by adding marinara sauce into a pan and bring to a simmer.
- Add all seasonings, salt and sugar. Stir well and adjust to your liking.
- Once the meatballs are cooked, add it into the prepared sauce and mix well.
- Let it simmer together for 3-5 minutes.
- Serve with gluten free pasta or rice and enjoy!
